Top your rice noodles with<\/p>\n<p>Veg:<\/p>\n<ul>\n<li>1 &#8211; 2 cups shredded Napa cabbage<\/li>\n<li>mung bean sprouts<\/li>\n<li>coarsely grated carrot<\/li>\n<li>thinly sliced\u00a0red bell pepper strips<\/li>\n<li>thinly sliced red onion<\/li>\n<li>quartered\u00a0cucumber\u00a0slices<\/li>\n<\/ul>\n<p>Proteins:<\/p>\n<ul>\n<li>chicken strips (leftovers?)<\/li>\n<li>dry seasoned or smoked tofu<\/li>\n<li>shrimp (so says my husband.
