From Joy of Cooking:<\/strong><br \/>\n Makes about 24 1 1\/2 inch biscuits<br \/>\n Preheat Oven to 450 degrees<br \/>\n Into:<br \/>\n 3\/4 cup cooked mashed sweet potatoes<br \/>\n beat:<br \/>\n 1\/4 cup melted butter<br \/>\n stir in:<br \/>\n 2\/3 cup milk<br \/>\n sift, then measure:<br \/>\n 1 1\/4 cups all purpose flour<br \/>\n Resift with:<br \/>\n 2 1\/2 teaspoons double-acting baking powder<br \/>\n 1 tablespoon sugar<br \/>\n 1 teaspoon salt<br \/>\n Stir the sifted ingredients into the sweet potato mixture.  Turn the dough out on a floured board and toss it lightly until<br \/>\n smooth on the outside.  Roll or pat it to the thickness of 1\/2 inch and cut with a floured biscuit cutter.  Bake on a greased pan<br \/>\n for about 15 minutes.<\/p>\n<p><strong>2. From Eloise Coffin:<\/strong><br \/>\n  3 c. mashed sweet potatoes<br \/>\n  2\/3 c. sugar<br \/>\n  1 t. salt<br \/>\n  6 t. baking powder<br \/>\n  3 c. flour<br \/>\n  3\/4 c. shortening<br \/>\n   Add sugar and shortening to warm sweets.  Add other ingredients.  Work well and let stand at least 5 hrs.  Roll out fairly<br \/>\n   thick.  Cut into biscuits.  Bake 15 mins. in 400 degree oven.<\/p>\n<p><strong>3. Paula Deen:<\/strong><br \/>\n  Ingredients:<br \/>\n  1 1\/4 cups all-purpose flour<br \/>\n  2 heaping tablespoons sugar<br \/>\n  4 teaspoons baking powder<br \/>\n  1\/2 teaspoon salt<br \/>\n  3\/4 cup mashed cooked sweet potatoes<br \/>\n  1\/4 cup (1\/2 stick) softened butter<br \/>\n  2 to 4 tablespoons milk (depending on the moisture of the potatoes)<br \/>\n Directions:<br \/>\n Preheat oven to 450 degrees F.<br \/>\n Sift together flour, sugar, baking powder and salt.  In a separate large bowl, mix the sweet potatoes and butter.  Add the flour<br \/>\n mixture and mix to make a soft dough.  Then add milk a tablespoon at a time to mixture and continue to cut in.  Turn the dough<br \/>\n out onto a floured board and toss lightly until the outside of the dough looks smooth.  Roll the dough out to 1\/2 inch thick and<br \/>\n cut with a biscuit cutter.  Place the biscuits on a greased pan and coat tops with melted butter.  Bake for about 15 minutes.<br \/>\n (Watch your oven:  If biscuits are browning too fast, lower the temperature.)<\/p>\n<p><strong>4.  American Cooking:<\/strong><br \/>\n  2 c. flour<br \/>\n  1\/4 c. shortening<br \/>\n  2\/3 c. sugar<br \/>\n  2 c. mashed baked sweet potatoes<br \/>\n  11\/2 tsp. salt<br \/>\n  2 tbsp. baking powder<br \/>\n  1\/4 c. milk<br \/>\n  Sift flour, sugar, salt and baking powder together; cut in shortening until mixture resembles cornmeal.  Stir in sweet potatoes;<br \/>\n  add milk gradually to form soft dough.  Turn onto lightly floured board.  Knead lightly.  Roll or pat 1\/2 inch thick; cut with<br \/>\n  2-inch biscuit cutter.  Place on greased cookie sheet.  Bake at 475 degrees for 12 to 15 minutes.<\/p>\n<p><strong>5.  Makemie Church (Snow Hill)<\/strong><br \/>\n  3 c. mashed sweet potatoes<br \/>\n  1 tsp. salt<br \/>\n  2\/3 c. sugar<br \/>\n  3\/4 c. shortening<br \/>\n  1\/2 c. milk<br \/>\n  3 tsp. baking powder<br \/>\n  3 c. flour<br \/>\n  Add sugar and shortening to potatoes while warm.  Then add other ingredients.  Work well; let stand about 4 or 5 hours<br \/>\n  before baking.
