{"id":42,"date":"2009-01-04T16:50:50","date_gmt":"2009-01-04T16:50:50","guid":{"rendered":"http:\/\/mishka.millefiori.net\/?p=42"},"modified":"2016-06-28T03:52:08","modified_gmt":"2016-06-28T03:52:08","slug":"grandmas-blintzes","status":"publish","type":"post","link":"https:\/\/mishka.millefiori.net\/?p=42","title":{"rendered":"Blintzes"},"content":{"rendered":"<p><strong>Grandma&#8217;s Blintzes<\/strong><\/p>\n<p>My grandmother&#8217;s blintze recipe emaile to me by Unca Bop Sunday, March 2, 2008<\/p>\n<p>2 eggs to a cup of milk<br \/>\n8 heaping teaspoons flour (to translate: about 1\/4 cup)<br \/>\nbissel salt<br \/>\nin Osteriser til mixed<br \/>\nThat is the leaf.<\/p>\n<p>Cheese &#8212; 2 envelopes or bars Farmer cheese<br \/>\nand an egg<br \/>\nsugar or subst to taste<br \/>\npinch of salt<br \/>\nmash up.<\/p>\n<p>In small frying pan with Teflon add Pam (grandma is a huge fan of Pam!).<br \/>\nPour in the Ost stuff when pan hot.<br \/>\nWhen firm dump on large plate and repeat til used up.<br \/>\nFold in cheese mixture to stuff on plate<br \/>\nput on lg baking dish.<\/p>\n<p>When all on the dish put in oven on 350 till lightly browned on top.<br \/>\nFini<\/p>\n<hr \/>\n<p><strong>My Blintzes:<\/strong><\/p>\n<p>Wrapper:<\/p>\n<ul>\n<li>1 1\/2 cups milk<\/li>\n<li>2\/3 cup water (seltzer)<\/li>\n<li>1 egg<\/li>\n<li>1 cup flour<\/li>\n<li>1 TBSP sugar<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<\/ul>\n<p>Wrapper Procedure:<\/p>\n<ul>\n<li>Add the wrapper ingredients to a blender and\u00a0mix \u00a0until smooth. Leave to rest for 1-2 hours.<\/li>\n<li>To fry, use a tiny amount of butter (1\/8 tsp) on medium to medium-low heat.<\/li>\n<li>Put about 1\/4 &#8211; 1\/3 cup of batter on the pan and swirl to coat.<\/li>\n<li>Cook around 5 minutes on one side only then set aside for later.<\/li>\n<\/ul>\n<p>Cheese Filling:<\/p>\n<ul>\n<li>2 (7.5 oz)\u00a0packages\u00a0farmer\u2019s cheese<\/li>\n<li>6 tablespoons sour cream, mascarpone, creme fraiche or softened cream cheese<\/li>\n<li>1\/4 cup\u00a0 sugar<\/li>\n<li>1\/2 teaspoon vanilla extract<\/li>\n<\/ul>\n<p>Procedure:<\/p>\n<ul>\n<li>Mix all filling ingredients together in cuisinart until smooth.<\/li>\n<li>Place 3 tablespoons or so on the cooked side of the \u00a0wrapper the fold.<\/li>\n<li>Cook the blintzes in a small amount of oil on both sides until golden brown.<\/li>\n<\/ul>\n<p>Serve with sour cherry or any other lovely fruit compote or sprinkle with a little sugar and top with sour cream.<\/p>\n<p>Adapted from:<br \/>\n<a href=\"http:\/\/smittenkitchen.com\/blog\/2014\/01\/cheese-blintz\/\" target=\"_new\">http:\/\/smittenkitchen.com\/blog\/2014\/01\/cheese-blintz\/<\/a><br \/>\n<a href=\"http:\/\/www.myjewishlearning.com\/recipe\/blintzes\/\" target=\"_new\">http:\/\/www.myjewishlearning.com\/recipe\/blintzes\/<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Grandma&#8217;s Blintzes My grandmother&#8217;s blintze recipe emaile to me by Unca Bop Sunday, March 2, 2008 2 eggs to a cup of milk 8 heaping teaspoons flour (to translate: about 1\/4 cup) bissel salt in Osteriser til mixed That is the leaf.
