Yum. <\/p>\n<p>Adapted from the Mumbai Veggie Burgers recipe in InStyle magazine March 2008<br \/>\nAnother adaptation lives here: <a href=\"http:\/\/arundathi-foodblog.blogspot.com\/2008\/03\/veggie-burgers.html\" target=\"_new\">http:\/\/arundathi-foodblog.blogspot.com\/2008\/03\/veggie-burgers.html<\/a><\/p>\n<p>Chop and then puree (in cuisinart) and then squeeze out the liquid through a cheesecloth. Add to a big bowl:<\/p>\n<ul>\n1 lb peeled carrots (yum carrot juice)<br \/>\n1 medium onion<br \/>\n3 stalks celery<br \/>\n1 red pepper<br \/>\n4 med or 5 large white mushrooms<\/ul>\n<p>Add to the bowl:<\/p>\n<ul>\n3 cloves chopped garlic<br \/>\n1 chopped seranno chili<br \/>\n1 medium shallot (chopped thinly but not pureed)<br \/>\n1 tablespoon curry powder<br \/>\n1\/2 tsp ground cinnamon<br \/>\n1\/2 tsp ground ginger<br \/>\n1 cup ground walnuts<br \/>\n1 1\/4 cup matzo meal<\/ul>\n<p>Mix together (in a measuring cup) and then add to bowl:<\/p>\n<ul>\n4 eggs<br \/>\n1 tbsp soy sauce (yep, I left it in)<\/ul>\n<p>Mix it all well and form into 1 1\/2 &#8221; diameter balls. Flatten balls &#8211; helps if you wet your hands first &#8211; and cook like pancakes (spray skillet with nonstick spray  but don&#8217;t fry in oil or you&#8217;ll get really greasy patties).<\/p>\n<p>Served reheated with hot katsup on top.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I made these for Passover 2008.
