Gazpacho

Once upon a time, I had a V8. No really. It was a recipe from Jeff Smith: The Frugal Gourmet. I don’t know where I put the actual recipe but I found my short notes for making it. I must have been making it a lot because I left off the quantities as if I had them in my head. That was many moons and 2 kids ago. I made it again last week for the first time in ages. Here’s what I did:

Ingredients:

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 2 med tomatos
  • 1 small to medium red onion
  • 1 medium  to large cucumber
  • 3 stalks of celery
  • 1/2 cup fresh cilantro
  • 3 cloves garlic
  • 2 tbsp chopped jalapenos
  • salt/pepper to taste
  • 32 oz v8
  • 1/4 cup (ish) lemon juice
Procedure:
Chop all the veggies, puree them in the cuisinart.
Add to the V8 and lemon juice.
Serve with a chopped avocado and sour cream (or Greek yogurt)
