Coconut Corn Chowder (in prog)

1 tablespoon butter or coconut oil

4 cloves garlic, minced

1/2 onion, diced

2 tablespoons freshly minced ginger

1 red bell peppers, diced

2.5 cups veg or chicken stock

1/4 cup soy sauce

1 TBSP sriracha

1/8 teaspoon pepper

2 cups diced potatoes (boil for 20 minutes)

2 1/2 cups cooked corn (canned is fine)

1 can coconut milk

Option:

1 cups fresh bean sprouts

1 carrot, peeled and sliced super-thin

2 ounces thin rice noodles

Garnish:

lime juice

jalapenos

cilantro
